Plenty of vegetables and protein in these simple little tasty balls! They can be served with a simple dip, just as they are, eaten as a snack, added to a salad, or cooked in a lovely tomato sauce and served with some additional steamed vegetables.
There really are no rules when it comes to eating a variety of vegetables, whatever way you like it – eat it!!
Vegetable and Bean Koftas
Chop or grate all vegetables (food processor or thermomix is good for this) and place chopped veggies in a mixing bowl.
Roughly mash the cooked beans and add to the vegetable mixture.
Add flour, seasoning and spices to the vegetable and beans and mix until the mixture holds together. I like to use hands for this!
Roll tablespoons of the vegetable mixture into balls and place on a baking sheet (place baking parchment on the tray to save on washing up!).
Brush Koftas with oil or melted butter and cook for 20-25 minutes or until golden brown. You may like to gently turn them half way during cooking.
