Plenty of vegetables and protein in these simple little tasty balls!  They can be served with a simple dip,  just as they are, eaten as a snack, added to a salad, or cooked in a lovely tomato sauce and served with some additional steamed vegetables.

There really are no rules when it comes to eating a variety of vegetables, whatever way you like it – eat it!!

  1. Heat oven to 200C.
  2. Chop or grate all vegetables (food processor or thermomix is good for this) and place chopped veggies in a mixing bowl.
  3. Roughly mash the cooked beans and add to the vegetable mixture.
  4. Add flour, seasoning and spices to the vegetable and beans and mix until the mixture holds together. I like to use hands for this!
  5. Roll tablespoons of the vegetable mixture into balls and place on a baking sheet (place baking parchment on the tray to save on washing up!).
  6. Brush Koftas with oil or melted butter and cook for 20-25 minutes or until golden brown. You may like to gently turn them half way during cooking.
